Cut chicken into cubes. Cook until done. Cut peppers and onions into strips. Add to chicken. Cook until tender but not mushy. Add fajitas seasoning. Serve with cheese and sour cream on the side. Add beans or rice and tortillas chips and salsa and you've got a quick meal
Put all the ingredients into a crock pot on low. Let them melt together. Stir frequently. Serve warm with vegetables or bread to dip into cheese.
Baked Fiesta Enchiladas
1 Red Pepper
8 oz mushrooms
1/2 cup green onions
1 Tbs butter
1 cup sour cream
1 can cream of chicken
8 oz shredded sharp cheddar cheese
2 cups chopped cooked chicken or turkey
6 flour tortillas
1 jar salsa
Preheat over to 350 degrees. Combine pepper, mushroom, onion, and butter in a saucepan. Cook over medium heat about 5 minutes or until pepper and mushrooms are tender. Drain. Add sour cream, soup, half of cheese. Stir in chicken. Center about 3/4 cup filling on each tortilla, roll up and place side by side in glass casserole dish. Top with salsa and remaining cheese.
Bake on middle rack for 25 to 30 minutes or until thoroughly heated.
Baked Squash
5 lbs Yellow Squash
2 eggs beaten
1 Cup bread crumbs plus exra for topping
1 stick butter
1/4 cup sugar
2 Tbs onion
1 tsp black pepper
1 dash salt
Cut tips off squash and cut into each squash into 3 or 4 pieces. Cook squash in saucepan with enough boiling water to cover. Cook until tender. Drain in clander and mash. Drain off any remaining liquid.
Combine with beaten eggs, breadcrumbs, butter sugar, salt, onion, and pepper. Turn into large casserole dish that has been lightly sprayed with nonstick spray. Cover with a light layer of breadcrumbs. Bake at 350 degress for 20-25 minutes or until lightly browned.
Salmon with Fettucine.
6 oz cooked salmon
1 Tbs minced chives
1/2 diced tomatoes
1 Tbs butter
1 Tbs flour
1/2 cup chicken broth
1/2 cup heavy cream
Nutmeg
Salt
Pepper
Fettucine noodles cooked, drained and set aside.
In a saucepan melt butter over low heat. Whisk in flour until mixed. Slowly add chicken broth and cream. Stir until well blended. Stirring constantly, heat sauce until thickened. Add @ 1 tsp nutmeg, more to taste. Season to taste with salt and pepper. Cut salmon into small slices. Add salmon and chives to sauce. Simmer 10 minutes. Serve over noodles. Garnish with diced tomato.
